Black Bean Salsa

This recipe is quick and easy to put together.  It is best if prepared a day ahead.


Combine all ingredients and mix well.
2 cans black beans, rinsed and drained
1 can whole kernel corn, rinsed and drained
1 red bell pepper, finely chopped
1 small purple onion, finely chopped
1/2C cilantro, finely chopped
1/2C fresh parsley, finely chopped
1/4C olive oil
1/3C lemon juice
3 cloves garlic
1/2t salt
1 1/2t cumin
