Brazilian Cheese Bread

Have you noticed that "big box" stores have started stocking more ethnic foods? Some Korean staples, such as Japchae (stir fried vegetables with noodles) and seaweed squares are now available. The other day I saw a snack from Brazil, "Brazi-Bites."


Brazilian Cheese Bread, known in Portuguese as Pão de Queijo, consists of small ping-pong size (bitesize) breads.

This recipe is vegan. It is also gluten and dairy free. This was given to me by a friend from Brazil.

Preparation

Preheat oven to 400 degrees.
Line a baking sheet with parchment paper.

Ingredients


  • 1 1/2 C mashed potatoes
  • 1 1/2 C tapioca starch (not flour)
  • 1/4 C nutritional yeast flakes
  • 1/2 t salt
  • 1/3 C oil
  • 1/4 C water
  • 1-2 T milk (add additional milk if dough is dry)


Directions


  1. Combine all ingredients in a bowl and mix well.
  2. Form small balls with your hand.
  3. Place balls about an inch apart on a baking sheet lined with parchment paper.


Yield

Approximately 25 pieces
