PREPARATION
Preheat oven to 350 degrees. Grease 7x10 baking dish.
INGREDIENTS
- 1C dried lentils
- 2T oil
- 1 small onion, chopped finely
- 1 carrot, chopped finely
- 1 stalk celery, chopped finely
- 1 small red bell pepper, chopped finely
- 3 gloves garlic, crushed
- 1t dried thyme
- 1/2t cumin
- 1/2t chili powder
- 1/2t garlic powder
- 1/2t onion powder
- salt and pepper to taste
- 3/4C rolled oats
- 3T ground flax seed
- 1/3C water
- 1/2C barbeque glaze (Glaze #1 or Glaze #2)
DIRECTIONS
- Cook lentils following directions on package. Lentils should be tender. Drain lentils.
- In a medium pan, saute onion, carrot, celery, bell pepper, and garlic cloves in oil until tender.
- Add herbs and spices to vegetable mixture.
- In a blender, puree 3/4C of cooked lentils.
- Combine all ingredients except glaze in a large mixing bowl and stir until well combined.
- Press mixture into the prepared pan.
- Top with glaze and bake for 45 minutes.
